The Traditional Reggio Emilia Balsamic Vinegar, the pleasures of life


The PDO – Protected Denomination of Origin (EC regulations 510/2006 and 813/2000) have quite simply certified the absolute quality of all the processing phases for Traditional Reggio Emilia Balsamic Vinegar, produced with our brand “Cavalli”.

The Traditional is aging in centuries’ old barrels undergo a long period that can never be less than twelve years.

This is truly the Cavalli company’s’ pride:  we invite you without hesitation to taste it.

Skillful tasters will find in our balsamico besides the notes of classic wood of oak, mulberry and chestnut also the original inkling of barrels in cherry and juniper which leave an unmistakable aroma, very satisfying in terms of organoleptic quality.
After  checking of  ageing minimun of 12 years and 25 years for Extra-old, our vinegar must be examinated by master tasters that will verify his tipical traditional characteristics.
